A single chamber vacuum machine evacuates one load at a time and the operator waits through the cycle. A double chamber machine has two bays over a shared pump: one evacuates while the operator loads the other. The pump is the same. What doubles is operator utilisation, not vacuum performance.
The difference is the operator, not the pump
Both formats pull the same ultimate vacuum and use the same sealing bars. On a single chamber machine the operator loads, closes, waits out evacuation and seal, then unloads. That waiting is dead time. On a double chamber machine the lid swings to the second bay and the operator loads there while the first finishes.
This is why a double chamber rarely doubles output in practice. It removes operator idle time, so the gain depends on how long the cycle runs relative to how long loading takes. Short cycles with slow loading gain little. Long cycles on wet product gain the most.

Size the chamber before you compare prices
Chamber size, not machine class, is the specification most often got wrong. The chamber has to take the bag lying flat with the open end across the sealing bar, plus clearance. Measure your largest bag flat and compare against the chamber dimension, not the external dimension of the machine.

When a continuous or thermoforming machine is the better answer
If the operator is the bottleneck in both formats, the chamber format itself is the limit. A continuous vacuum machine moves bags through on a belt; a thermoforming machine makes the pack from film. Both cost more and both remove the manual load step entirely.

Does a double chamber vacuum machine pull a deeper vacuum?
No. Ultimate vacuum is set by the pump, and both formats use the same pump range. The second chamber buys operator time, not vacuum performance.
Can one machine handle both small retail packs and large primals?
Only if the chamber takes the largest bag flat. A chamber sized for primals runs small packs inefficiently because it evacuates the empty volume every cycle.
What limits cycle time on a chamber machine?
Pump capacity relative to chamber volume, and how much moisture the product releases. Wet product outgasses and extends evacuation.
Is gas flushing available on both formats?
Yes. Gas flushing adds a backfill step after evacuation, which lengthens the cycle slightly on either format.
